ian's brew journey

Panna cotta, Berry yoghurt, Violet

This coffee is part of our Chelín Gesha Series — four expressions of the same variety, grown by Enrique López at Finca Chelín in Oaxaca. This release is the Red Honey expression, shaped by fermentation time to deliver balanced sweetness, bright acidity, and a clean, rounded fruit character. Cherries rest in skin for 12–15 hours before being depulped and dried first under direct sun for two days and finished drying under shade.
