Kiwi, Tonic, Green apple

This is our third year releasing Valentina, and it's easily the best it has tasted. Named after the daughter of a Guatemalan farmer, the coffee is grown by Enrique López at his farm, Finca Chelín — an experimental Pacamara cross with roots in Guatemala. Black Honey for Enrique refers to the longer rest in cherry before depulping, developing riper fruit sweetness and added complexity, dried under sun and shade for balance and clarity.
