Cold Brew recipe and dial-in guide
Updated
Coffee steeped in cold water for many hours. Cold water extracts slowly and selectively, so it's smooth and low in acidity.
A starting Cold Brew recipe
This is where Cuplift starts a new Cold Brew brewer before it knows anything about the coffee. Once you add a bean, the recipe adjusts for roast, process and altitude, then learns from what you taste.
| Coffee | Water | Ratio | Grind | Steep |
|---|---|---|---|---|
| 60g | 600ml | 1:10 | 900µm (Coarse) | 16h |
Grind is in microns because a click means something different on every grinder. 900µm is about 30 clicks on a Comandante C40. Filter: Paper or mesh.
Steps
- Add 60g coffee at 900µm to a jar or carafe
- Pour in 600ml room-temp water
- Stir until fully wetted
- Cover and steep at room temperature for 16h
- Strain through paper filter or fine mesh
Dialling in a Cold Brew
The Cold Brew is a cold brew method, which decides which changes are open to you.
- Grind and steep length do almost all the work.
- If it's thin, steep longer or grind finer; if it's harsh or muddy, the reverse.
- Strength is easiest to fix at the end — dilute the concentrate to taste.
Whatever the problem, change one thing per brew. The dial-in guide covers the order to fix things in.
