- Water: 90ml + 100ml hot bypass + 50ml room-temp bypass (1:13)
- Grind: 780µm
- Temperature: 90°C
- Time: 1:30
- Filter: Paper (x2)

## Steps

1. Rinse filter
2. Add 18g coffee at 26 clicks
3. Bloom 55ml, strong swirl
4. Pour remaining 90ml at 90°C at 0:30
5. Gentle stir x2 at 0:50
6. Start pressing at 1:30
7. Finish by ~2:00
8. Add 100ml bypass water
9. Add 50ml room-temp bypass water
