## Steps

1. Rinse filter
2. Add 18g coffee
3. Bloom with 25ml, wait 30s
4. Spiral pour to 60ml at 0:40
5. Spiral pour to 100ml at 1:20
6. Spiral pour to 130ml at 2:00
7. Drawdown complete by ~3:00, at 2:30
8. Add 60ml bypass water

This coffee from Marcala is the produce of a number of farmers with a particular focus on organic growing, working together since 2001 in a partnership known as Café Organico Marcala, or COMSA. COMSA supports farmers in transitioning to organic and sustainable practices, and devotes 25% of its income to education. The coffee is notable for its honey processing and rare mix of disease-resistant varieties including Parainema, Lempira, and Icatu.
