## Recipe

- Brewer: AeroPress
- Coffee: 20g
- Water: 120ml + 50ml hot bypass + 39ml room-temp bypass (1:10)
- Grind: 990µm
- Temperature: 90°C
- Time: 1:20
- Filter: Paper (x2)

## Steps

1. Rinse filter
2. Add 20g coffee at 33 clicks
3. Bloom 60ml, strong swirl
4. Pour remaining 120ml at 90°C at 0:30
5. Gentle stir x20 at 0:50
6. Start pressing at 1:20
7. Finish by ~1:50
8. Add 50ml bypass water
9. Add 39ml room-temp bypass water

A great value filter roast grown by Antonio Maria, who is farming in Las Nubes, La Paz. This washed process Colombia & Castillo variety lot is sweet with nice clarity, with caramel wafer & hazelnut notes. A perfect one for that morning hand-pour ritual brew, making for an excellent pour over filter or AeroPress.
